Zucchini Bread From: Kiss My Grits, Sugar: Southern Humor with a Side of Tasty Fixin's


1 cup grated zucchini (about 1 large)
1 cup granulated sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 eggs
1-1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup chopped pecans

Preheat oven to 350°. In a large mixing bowl, combine zucchini, sugar, oil, vanilla extract and eggs. Beat until well blended. In a separate bowl, mix flour, cinnamon, salt, baking powder and baking soda. Stir into the zucchini mixture. Fold in pecans. Pour into a 9” x 5” x 3” greased and floured loaf pan. Bake 55-60 minutes or until done. Remove from pan and cool on wire rack.
