Fresh Apple Cake Recipe From: Kiss My Grits, Sugar: Southern Humor with a Side of Tasty Fixin's

2 cups granulated sugar
1 cup vegetable oil
3 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
3 cups peeled and diced apples
1 cup chopped pecans

Preheat oven to 325ยบ. Grease and flour a 12-cup tube pan or Bundt pan. In a large bowl, beat together sugar, oil, eggs and vanilla. In a separate bowl, mix flour, salt, baking soda and cinnamon. Stir flour mixture into egg mixture. Add apples and pecans; stir until well blended. Pour batter into prepared pan. Bake about 1 hour and 15 minutes or until done. Cool in pan on wire rack for 15 minutes before removing. Invert cake onto wire rack to cool completely.
